Badami Gosht Recipe

Ingredients:
• 1½ Lb Lean Cubed Lamb
• ½ Cup Ground Almonds
• 1 ½ Cup Coconut Milk
• 1 ¼ Cup Yogurt 
• 5 Tbsp Vegetable Oil
• 2 Cinnamon Sticks
• 6 Garlic Cloves
• 4 Red Chilies
• 1 Tbsp Cardamom Seeds
• 2 Chopped Onions
• 2 Garlic Cloves
• 1½ Inch Fresh Ginger
• 1 Tsp Saffron Threads
• 1 Tsp Chili Powder
• Salt to Taste

Method:
• Fry cinnamon, cloves and cardamom in heated oil.
• Add onion, sauté until soft, stirring occasionally.
• Add garlic and ginger and fry.
• Add lamb cubes and fry until brown.
• Whisk yogurt, saffron mixture, salt and chili powder together and add to lamb cubes.
• Grind almonds with enough water to form a thick paste.
• Add paste and whole chilies to lamb cubes, stir well and cook for 5 minutes on low flame.
• Add coconut milk, cover and cook for 35-40 minutes on low flame.
