Soan Papdi Recipe

• 1¼ cup Gram Flour
• 1¼ cup Maida
• 250 gms Ghee
• 2½ cups Sugar
• 1½ cup Water
• 2 tbsp Milk
• ½ tsp Crushed Cardamom Seeds
• 4" squares cut from a thin polythene sheet

• Mix both flours together and roast in heated ghee.
• Prepare sugar syrup simultaneously with 2½ thread consistency.
• Pour the sugar syrup into the flour mixture.
• Beat well with a large fork till the mixture forms threadlike flakes and then add crushed cardomom.
• Pour the mixture onto a greased surface and roll to 1" thickness lightly. Sprinkle the elaichi and gently press down with palm.
• Cool and cut them into squared pieces.
